Yummy Chicken & Gnocchi recipies

I made these last night and served them with steamed broccoli.



Gnocchi with Sage-Butter Sauce (serves 2-3)
I found this on allrecipes and did some alterations.


1 16oz pkg of mini gnocchi from World Market
1/4 c. unsalted butter
1 tsp minced garlic
1 tsp dried sage
1/4 tsp salt
1/4 c. grated Parmesan cheese
1/4 tsp fresh grnd black pepper


cook gnocchi 2-3 minutes in boiling salted water (til they float) - then drain


melt butter over medium heat in a medium sized skillet. stir in the garlic and cook for a minute or two until it has started to turn brown. stir in the sage and salt, and then the gnocchi. Toss gently with the Parmesan and pepper. Sprinkle with additional Parmesan to serve.



Baked Parmesan-Crusted Chicken (serves 2) (preheat oven to 350º)


2 boneless skinless chicken breasts
1/4 unsalted butter
1 tsp garlic
1/3 c. dry bread crumbs (I used some homemade sourdough that I had been saving)
2 Tblsp grated Parmesan
2 Tblsp Italian Season mix (or equivalent volume of your preferred seasonings)
1/8 tsp fresh ground pepper 
1/8 tsp salt


melt butter with garlic in sauce pan over medium heat until butter starts to bubble. remove from heat and let cool slightly. while the butter is cooling, mix the remaining ingredients (except chicken) together in a bowl (I used a flat soup bowl). dip the chicken into the butter/garlic then press into the seasoned breadcrumbs. place chicken in a baking dish.


bake until the chicken is golden brown, and the juices run clear, and internal temp is 165º (50-55 min)

I cannot wait to try this! My husband had just been talking about making gnocchi earlier in the day but has never attempted it. This will be a great inspiration to try it out finally.
